
DAVE'S SWEET POTATO PIE
3 cups canned sweet potatoes
(already cooked, just need to drain and mash)
1 cup sugar
2 eggs
1/2 cup milk
1/2 tsp. salt
1/2 stick butter (melt in microwave)
1/2 tsp. vanilla
Mix all together, and place in casserole dish...
~Topping~
1 cup brown sugar
1/3 cup flour
1/3 stick butter (melt in microwave)
Mix topping together, and sprinkle on top. Cook at 375 for 40 minutes
CRUNCHY CHICKEN 'N RICE BAKE
1(10 3/4 oz.) can condensed cream of mushroom soup
1 (2 1/2 oz.) jar sliced mushrooms, drained
2 cups milk
2 cups cooked, cubed chicken
1 cup uncooked rice
1 (1 lb.) can cut green beans, drained
2 Tbsp. chopped pimiento
1 cup grated Cheddar cheese
1 (3 oz.) can Durkee French fried onions
In a large saucepan, combine soup and milk; heat just to boiling, stirring constantly. Remove from heat and stir in chicken, rice, beans, mushrooms, pimiento, 1/2 cup cheese, and 1/2 can French fried onions. Pour into a greased 2 quart casserole; stir. Bake, covered, at 350 for 40 minutes. Top with remaining cheese and onions; bake, uncovered, 5 minutes longer. Makes 5 to 6 servings.
MARY'S CHIPS & DIP
1 1/2 lb. ground beef
2 jars salsa (hot or mild)
1 lb. velveeta mexican cheese
2 cans refried beans
Brown meat ~ drain with how water. Place meat back in pan. Add remaining ingredients and stir until cheese is melted and beans are mixed thoroughly.
Serve with tostitos chips
SALSA
4 cans diced tomatoes with green chili
onions
celery
green pepper
Place first ingredient in large bowl and add enough vegetables, chopped VERY FINE, until you acquire the texture of your choice : )
JANE'S GOULASH
1 lb. ground beef
salt, pepper, garlic powder to taste
15 ou. can Hunt's Tomato Sauce Special
1 can tomato soup
1 8oz. can tomato sauce
7 oz. pkg. macaroni noodles
Brown meat ~ drain grease ~ add rest of ingredients. (Cook noodles first!!)
PUMPKIN CAKE
1 1/2 cup oil
3 eggs
2 cups sugar
2 cups pumpkin (1 3/4 c)=1 reg. size can
1/2 tsp. baking soda
1/2 tsp. baking powder
2 tsp. pumpkin pie spice
1/2 tsp salt
3 cups flour
1/2 cup chopped pecans (optional)
Mix all ingredients as they're written ~ add flour last. Batter will be lumpy. Bake @ 350 for 1 hour in either loaf pan or tube pan.
TOPPING FOR PUMPKIN CAKE!!!
2 pkgs. Dream Whip
2 pkgs. instant lemon pudding
5 cups milk
Beat until thick ~ refrigerate.
PEANUT BUTTER COOKIES
1 cup peanut butter
1 cup sugar
1 egg
Combine all ingredients. Roll into small balls. Flatten with fork. Bake at 350 for 8-10 minutes.
EASY SAUSAGE & POTATO SOUP
2 sliced potatoes
1 can cream of mushroom soup
1 can cream of cheddar soup
1/2 can of water
1 pkg. smoked sausage (diced)
3 chopped green onions (optional)
Cut potatoes and sausage, add other ingredients and throw into crockpot...cook all day...delicious!
JELLO ICE CREAM
1 pkg jello pudding
1 1/2 cup milk
8 oz. cool whip
Mix and freeze
QUAKER OATMEAL COOKIES
2 1/2 sticks soft butter
1/2 c sugar
1 tsp vanilla
1 tsp baking soda
1 tsp cinnamon
3 c quaker oats
3/4 c brown sugar
1 egg
1 1/2 c flour
1/2 tsp salt
1/4 tsp nutmeg
Heat oven to 375. Beat butter & sugars until creamy. Beat in egg & vanilla. Add combined flour, soda, salt, & spices. Stir in oats. Bake 8-11 minutes.
EASY JELLO
1 6oz pkg Jello - lime or whatever
1 8oz pkg cream cheese
1 8oz can pears
Dissolve jello in 2 cups boiling water. Blend softened cream cheese and can of pears (liquid too) in blender. Pour into mold.
ORANGE JULIUS
6oz can frozen o.j.
1 cup milk
1 cup water
1/2 cup sugar
1 tsp vanilla
20 ice cubes
Place into blender...enjoy!
SPINACH DIP
1 10oz frozen pkg chopped spinach
1 1/2 cup sour cream
1 cup mayonaise
1 can water chestnuts (chopped)
3 green onions (chopped)
1 box KNORR vegetable soup mix
Thaw pkg of chopped spinach and pat dry with paper towels. Mix all, chill for 3 or 4 hours and serve on small rye bread or crackers.
DUMPLINGS
1 1/2 c flour
2 tsp baking powder
3/4 tsp salt
3 tbs shortening
3/4 c milk
Put 1st 3 ingredients in bowl...Cut in shortening with pastry blender and stir in milk only until blended. Drop by spoonfuls onto stew, cooking 10 minutes uncovered...then 10 minutes tightly covered.
GIBLETS & RICE
1 chopped onion
2 stalks celery w/leaves, chopped
1/2 lb sliced, fresh mushrooms, or canned w/juice
giblets, washed & w/skin
salt
water to cover
Place all in large saucepan & boil about 2 hours 'til giblets are tender. Remove giblets & let cool. Remove skin & chop meats. (neck meat has to be peeled off & chopped, careful of tiny bones.) Return to pan, boil & add enough instant rice. If not fatty enough, add 1/2 stick margarine. Prepare as for instant rice, setting off burner for 5 minutes.
STUFFING
12 strips bacon
2 medium onions, chopped
2 whole stalks celery w/leaves, chopped
Loaf stale white bread, cut in cubes
2 eggs
milk to moisten
2 tablespoons butter
1 tablespoon sage
salt/pepper
Fry bacon, onions & celery in LARGE pan; set aside. When cool (put bacon fat not concealed,) put in rest of ingredients & mix thoroughly. Stuff in cavity or bake 1/2 hour in greased, covered casserole.
